Is it unsafe because of the fumes (can it be used under our ventalation hood indoors?) or is the because the legs heat up to make it a fire hazard?

What size is the male fitting on the burner controls?

The male fittings on the stove are a 3/8" male fitting. It may be that the hose you purchased is 3/8" with a fitting other than a 3/8" female fitting.

It is made to use with the normal 20 pound gas grill connections and tank. The manufacturer did not have the exact pressure. Yes, it can be used with the 0.5 psi from the RV exterior quick connect fitting.
