The two stage has two pairs of gears which in the 1st stage will provide high volume at low pressure and the 2nd stage will provide low volume at high pressure. This type requires a smaller motor to operate.

A two-stage pump is used to rapidly cycle a cylinder until it encounters the load, at which time the pump's output changes from high flow, low pressure to low-flow, high pressure, an effect not unlike shifting to a lower gear when climbing a steep hill in an automobile.
If a device such as a log splitter were designed with a single stage pump and expected to rapidly cycle the cylinder, the prime mover (engine or electric motor) would have has to be sized to the maximum pressure and flow capabilities of a high volume pump, which would result in having to use an unreasonably large engine or motor, driving up the cost and size of the unit.
The two-stage pump allows a lower powered engine or motor to generate high pressure when required but still be able to achieve a more rapid cycle time.
